Crispy Roast Potatoes

Potatoes.

Ready to boil.

Ingredients

1kg Kipfler Potatoes

Butter

Salt

Olive Oil

Peeling potato.

Method

Peel and chop potatoes

Place in large saucepan with pinch of salt and bring to the boil

Remove from heat when they start to become a bit soft (not too soft)

Oil potato.

Strain water and while still in the saucepan, add a tablespoon of butter

Put on the lid of the saucepan and give them a light shake. This will help them fluff up and also mix the butter through.

Shimmy potato.

Potato colander.

Lay the potatoes out on a baking dish and drizzle with olive oil and salt.

Bake at 180-200C for around 30 mins (or until crispy)

Crisp them up in the oven.

Serve with your favourite roast.
