1 Good quality whole raw chicken

Sea Salt

Butter

Rubbing the butter in.

Method 

01. 

Preheat oven to 220°C

Rub the outside of the chicken with a thick layer of butter, making sure it's all over and in the crevices.

Rub/sprinkle salt over the butter

Place chicken on a baking tray and pop in the oven for 30mins

After 30 mins, turn the heat down to 160 and roast for a further 30mins.

Remove from oven and let it rest for 10-15mins before serving.

If the skin hasn’t browned after the hour, you turn the heat back up from another 10 to get that crispy finish.
