Super Easy & Healthy "Ramen"

We use “ramen” as a loose term here because this isn’t a traditional recipe. It is, however a light, healthy and nourishing soup that you can use as a base and build on to make your own.

This recipe can be adjusted for our vego and vegan friends, or you can also add protein for those who need a bit of extra protein.

Ingredients.
Ingredients (for 2 bowls)

1 tbsp hulled tahini

1 1/2 tbsp miso paste

03. 

1 tsp crushed or grated ginger

2 cloves crushed garlic 

05. 

1 tbsp soy sauce 

06. 

1 tbsp mirin 

07. 

1 tbsp rice vinegar

Sesame oil

1L of stock (we like bone broth but you can use veggie stock to make it vegan)

2 eggs (or one if you only want half in each bowl) 

11. 

Handful of greens (any asian green veg works great) 

12. 

Fresh egg or flour noodles 

13. 

Chilli oil or flakes 

14. 

Mushrooms (we use this as a meat replacement so it is optional)

Sesame seeds

Method

Heat a bit of sesame oil in a large saucepan and add ginger and garlic and lightly sauté.

Next add the miso, tahini and stock + soy sauce, mirin and rice vinegar and chilli oil. The tahini can often separate so you can whisk this with a bit of water before adding it.

Add base ingredients to the pot.

With a whisk mix the ingredients until they’ve blended together. Bring to the boil and then reduce to a simmer. Whisk every so often.

While the soup base is cooking, pop the eggs in boiling water and cook for 7-8 mins. Once cooked pop these in cold water and then peel. You can place the eggs in some soy sauce for added flavour.

Next heat the rest of the sesame oil in a fry pan and sauté mushrooms. Add the sesame seeds.

Wash the greens and place then in a large bowl. Blanch with hot water.

Cook the noodles as per packet instructions.

Try your broth – does it need more salt? More chilli? Adjust to your liking.

In a large bowl, place some greens at the bottom, topped with the noodles. Evenly Ladle in the broth into the bowls, top with the mushrooms and whatever extras you want to add. I love putting freshly sliced spring onions, chilli flakes and crispy shallots.

Slice the egg and place on the top.

Top with egg and garnishes.
