Inoue Honten's Igeta Usukuchi is a traditional, additive-free light soy sauce (Usukuchi Shoyu) made by Inoue Honten, a 6th generation soy sauce producer in Nara, Japan. It's brewed using a traditional method with Japan-sourced soybeans and wheat, and aged for about a year, sometimes 1.5 years.
