Fermented Chilli & Butter Grilled Prawns

Ingredients

Serves 4-6 as an entree

12 - 18 uncooked green prawns

2 tbs Fermented Chilli Paste  (adjust depending on your spice level)

100g butter

Melt butter and chilli.

Melt fully and set aside for basting.

Method

01. 

Devein and clean the prawns but leave in the shell.

Melt butter and chilli in a pot. Stir to combine, once melted set aside.

Baste while you grill.
03. 

Grill the prawns on the grill and baste 2-3 times with your butter mixture. Grill until just cooked.

Serve prawns with a bit of lemon, a sprinkling of your herb of choice and a bit of extra chilli.

Top with lemon, herbs, extra butter and chilli.
