Yuzu Honey Glazed Ham

Ingredients 

Serves 6-10 depending on Ham size

Preheat oven to 165°C Remove the excess fat cap on the ham but try to leave a bit of regular fat.

Score the ham in a diamond pattern about 1-2cm deep into the fat surface, try to avoid cutting into the meat itself. Push the cloves evenly around the ham.

Score the ham.

Add a good amount of honey to a bowl and baste the ham with an initial glaze of honey.

Prepare honey bowl for glazing.

First ham glaze.

Glaze the ham using the Yuzu Honey then place into the oven.

Cook for about 1hr 15 mins basting the ham every 15-20 minutes.

Keep glazing.

Continually baste ham with pan juices and extra honey.

Once the ham is nicely coloured remove from the oven and doing a final baste using the pan juices. If your ham still looks a little pale you can increase your over temp to a higher heat for a further 5-10minutes or pop the ham under the grill to colour to your liking.

Let ham cool slightly before slicing and serving. Add all the extra pan juices to a jug and serve with the ham at the table.
